Must love apples

I’m not exaggerating when I say that I haven’t slept in this late since… Never. I woke up at noon and felt so discombobulated! Do I eat breakfast or lunch or brunch?! The thing is – I’m not a brunch person. I prefer trying to stick to the same eating schedule during the weekends too. My body clock kind of functions on that schedule!

So breakfast it was! I decided to keep it light because I would be eating lunch soon. Wasa crispbread and one boiled egg. My mom’s friend has a chicken and brings us fresh eggs once in a while! How cool is that?! That’s what I call “clean eating”! And a cup of coffee.

I then realized that I had 3 hrs to get myself together, go for a quick run, have lunch, and bake M a treat!

And somehow I managed it all! The run was perfect, short, and not cold at all! Probably because I layered mucho. I looked like a running rainbow. So classy.

Given that I was short on time and am still taking it easy, I kept my run short and on the grass!

When you know that there is a 20-min loop and you have 20 minutes to spare, there isn’t a single excuse to stop you from running. Minus the 30F weather and 10mph wind.

Lunch consisted of left-overs: minestrone soup (I have a theory that my Grandma’s soups taste better and better the longer they stand…) And whole grain bread with the sautéed eggplant-zucchini-tomato-pepper stuff we make every week and store in the fridge. I eat it by the spoonfuls whenever! It’s like my version of a go-to snack.

More importantly, I decided to bake Sharlotka for M! It’s a Russian version of apple pie and is the easiest thing ever. Moist. Sweet. Easy.
Disclaimer: you have to love apples to love Sharlotka. It’s a whole lotta apples!

Ingredients: makes two loaves
3 medium apples
3 eggs
1 cup granulated sugar
1 cup all-purpose flour
1 tsp vanilla extract
1/2 tap baking powder
A pinch of salt

Instructions:
Line the baking pans with parchment paper. Butter or spray the paper. Peel, core, and dice the apples and spread evenly in the pans.
In a mixer or with a whisk, mix eggs with sugar, then add in the vanilla, flour, baking powder, and a pinch of salt.
Pour the batter over the apples and shake a bit for it to spread through the gaps.
Bake at 400F for about 30min until the batter does not stick to a toothpick! Voila!
